Fresh Sockeye in Halifax!
I was walking through the Costco and noticed that they were selling wild, sockeye salmon that was caught no more than 2 days ago. I asked the fishmonger if I could feel the fish, and it was nicely muscled and obviously fresh. So I bought one.
After cleaning it up and patting dry, I stuffed it with lemon rounds, onion rings and fennel fronds … wrapped it in tinfoil and slapped it on the BBQ for 30 minutes.
I was taken back to Vancouver Island when I cooked my very first spring salmon I had caught on a rod. What a treat.
